Anyone know if it is possible to rhodium plate a watch with platinum or white gold?

In a word, yes. But why? Stainless steel is. Bling factor 10+.
You are just making a rod for your own back. Better to buy the real deal. Fewer issues in all respects IMHO.

Maybe you mean to rhodium plate a watch with platinum or a white gold case. I think this is done for protection as I have seen some of the Breitling parts listed as white gold with rhodium plating. I think this is done because of tarnish.

Personally I would not do it. Once you plate anything as apposed to it being solid you can no longer polish out a nick. I would much rather polish a bit of tarnish once in a while.
