I found a lot of good references in my local library reference section~Most if not all deal primarily with repairing of old clocks and minor repairs of wristwatches~Cheers! ;-)

As far as maintaing old watches start with the Time Zone watch courses. They will teach you the basics includeing proper lubrication. Learning the history is such a vast subject that it's best to find one brand and study it. That will create a bit of a dilemma because the better the history the more expensive the watch tends to be.

let us talk about the basic theories and rebuilding of watches, the hestory i'm talking about is about the wristwatches building in general.
studying the brands i think is good only for buying watches to detemined the age of it, and to avoid faked deals.
