I understand that the GMT II bezel inserts can be changed (Pepsi, Burgundy and Black, Black).

First choice would be to find a friendly AD with an in-house watchmaker. Second choice would be an independent watchmaker who has access to Rolex parts. And you may want to make sure that you get back the replaced insert.

Rolex wont service any watch that is not completely authentic so don't get a aftermarket bezel or have anyone other then Rolex do the work. An AD may have a spare bezel but most likely not. Rolex does not send out their parts to dealers. Also Rolex does not make the odd colors you mentioned. I advise against changing the bezel and I am pretty sure any AD would do the same.
There are colour options for the Rolex GMT bezel, and Rolex has been making thethree colour options for years. The Rolex GMT II 16710 has three bezel colour options:
1. Pepsi (red and blue): 16710 BRLO
2. Black and burgundy: 16710
3. All black: 16710 LN
This is all on the way out, however. As per info coming out of Basel World 2007, the GMT II 16710 is no longer being made; the stainless steel GMT will now be, like the anniversary model GMT II, a supercase, triplock crown design with maxi dial, "Rolex" stamped on the inner chapter ring, polished centre links on the Oyster bracelet, improved clasp and all black ceramic bezel with white gold PVD treatment of the engraved bezel numbers. Price will increase, and there will be no colour choices for the bezel, including no more iconic "Pepsi" (blue and red) that was originally designed for the PanAM pilots for whom the GMT Master was designed.

never knew the blue and red was called "pepsi"... learn something new everyday. I will say though the new GMT II is a beautiful watch. The ceramic bezel looks really nice.
You can order the inserts through AD's, they cost around £26 and are dead easy to swap over with just a bezel remover (which costs about a tenner).
