I would spend my money on a Seiko SARB033. A little smaller than the Vantage (37/38mm) but it's about the same price as a Vantage (Seiya Japan: $ 469.00), it's built like a tank and... (very important imho) there's a hint of the Grand Seiko in this watch!

I don't know that I would subject a SARB033 to the rigors of 'holiday' wear, though. Well, maybe dinners out, but definitely not the beach.
I will second the Bernhardt Binnacle Anchor recommendation. It has a Miyota movement, 200m WR, sapphire crystal, and super thick, solid bracelet + leather strap. All for ~$240.
The BBA would make an excellent One Watch for everything, IMO.

Life is short. How sad to have realized in your death bed that you've worn a crappy watch as a "daily beater" for most of your days.
Best bet is going to be tracking down a used Vantage, or (if you can live without the date feature) the Smiths Everest is the closest that you can get to the dial design. The Smiths is even closer than the Rolex Explorer.
