Yes probably quartz. Trying to keep it under $1000. As far as materials anything not yellow gold in color. She favors stainless or white gold. Diamonds are not necessary. As far as size, maybe something on the larger side.

Well under $1000: check out the quartz offerings from Tissot and Mido. Some very nice affordable pieces.
Close to $1000: here you can get into some of the Tags and Longines (grey market). The Longines Le Grande Classique comes in a lot of different sizes. As does the PrimaLuna.
You also may be able to track down a pre-loved Omega Constellation or something similar.
Oh! And for something a bit different check out Rado. I personally love the look of their original line, but they have a ton of designs.

Christopher Ward has a nice line of ladies watches. Unfortunately, they are in the UK, and you haven't given yourself much lead time.

You don't have time for leisurely shopping and price comparisons...
If she wants a larger but classic/dressy watch in steel, the mid-size (37mm) Hamilton Jazzmaster is a good bet at that price point. Actually, the automatic version is at your price point; you can buy two 34mm quartz models for the same budget!
