    Jambalaya !!!!

    This evening (or I guess yesterday now... haha), we had a little neighboorhood get together...
    I cooked an alligator sausage, chicken, and tasso jambalaya.

    1st, grilled the alligator sausage


    Then in 3 gallon cast iron pot, cooked down onions, peppers, celery, spices, sausage and tasso


    Added beboned chicken (which was boiled earlier to create stock)

    Add liquids (chicken stock, Abita Amber beer, soy sauce, and hot sauce).Simmer for 20 minutes. Add rice (parboiled long grain). Bring to rolling boil. Once boiling, back down to simmer, cover with a slight vent for 20 minutes.

    This is the first time I hear about the alligator sausage, people do eat alligator around the world but I didn't think they also make sausage.

    I wish I could taste it one day.

    That looks awesome! It inspired me to make a batch of boerwars/chicken/ham jambalaya today... But no photoessay

    Yeah guys, alligator is very "dry" (very little fat) like deer. So, it is mixed with pork to make sausage (60 gator, 40 pork), just like deer.

    Now, if you cube alligator tail meat and then tenderize it by soaking it in milk for 8 hours or so, batter and fry that and you'll be really happy!

    Never had aligator either, that Jambalaya looks yummy! Thanks for sharing! Any other aligator dishes you'd care to share? For some reason I always thought that aligator would taste like tuna. I don't even know why I think that.... :D
