I chose the Tank. I love the Santos but its sport dress, with some casual. I think the Hermes is a damn fine watch and I've considered owning one, but the Tank IS Cartier and is a gorgeous dress watch.

My favorite of the three is probably the Hermes. The tank is the most dressy. IMO, square watches, even this Santos, lean toward casual wear.
Whichever way you go, you've crafted a list of choices that many would not be daring enough to wear (myself included). Kudos and enjoy.

My choice would be the Slim d’Hermès silver dial. As a dress watch, the Slim d’Hermès dial is visually interesting with its baton style hands, a small seconds dial and the typography designed used for the numbers, along with a hash mark in replacing the number 6 below the small seconds dial.
