Seiko 5 7s26b automatic movement time change question?

Hi, I have a Seiko 5 watch with a 7s26b movement. Im trying to set the time as close as possible to the exact time

Can you wind the hands backwards or hold the crown to keep the hand from moving? Also I read that you shouldn't adjust the time between 9pm-3am.

Some people on other posts have said that winding backwards/holding crown/adjusting 9-3 won't hurt the watch and then others have said it can.

This is my first auto watch I've ever owned.

I've been able to get the second hand to stop or tick backwards by slowly turning the hands backwards. I don't know if it's bad for the movement or not.
