Steelfish is running like a top/Never been serviced, but...

It was "born" in 2006. At this point, it's not even the movement that I'm worried about - it's the gaskets. Should I send it for service at Breitling? I know the old saying "if it's keeping good time, leave it alone." However, do I have a valid concern? Thanks.

    Do you dive? Or swim?

If so, get a pressure test done. I usually get one every ~2 years or so. Just to make sure everything is all good.

Gaskets should be replace every 1 to 2 years, so I'm told. I think every 2 to 3 years.

Not with it on, but I do subject it to some boating and the occasional rain storm.

As stated above, a pressure test should let you know about the state of the gaskets. Also, get a quote for servicing, and maybe you'll get a reasonable offer and you'll pull the trigger. After that, you will be sure it's all OK.

    Six year old gaskets?

Unless you've been swimming in anhydrous ammonia, live in a pure ozone atmosphere, or live in an area with average temperatures in the 150 to 200 degrees F range, the rubber gaskets have a while to go before they cease to seal.

The case back, if never removed, should not give problems in beteween regular services. The crown seals, are slightly different, but with a screw down crown, they also should last a full service interval, without problem. Non-screw down crown seals in automatics should be dchanged every two or three years, if you dive, otherwise I wouldn't worry to much about it.
