I'm not a watchmaker, but I also call Sydney home. Welcome!

Oh brilliant. Hey SSTEEL do you mind me asking how many years you have under your belt? Are you working in the industry?

How does one go about 'self teaching' the trade? How do you get to be a watchmaker instead of a tinkerer/hobbyist?

Well to be honest. A lot of the work is just finesse. Practice makes perfect. If you understand what the parts do, and the principals behind watchmaking then its not that difficult. If you know what influence an adjustment makes, negative or positive, and you practice constantly then then it could be done I suppose. I dont recommend it as ive got thousands of hours under my belt and still learn new things but each to their own. Do what makes you happy. Theres plenty of material out there, I just would be disapointed if someone was self taught and charging for it, that part probaby isnt good.

Part of my skills are self taught, but I have also invested in books, and online tuition too.

I finally got the back off that Everite! No looking at the new case scratches in the photo, of course.... It is a Peseux 7060 which places it late 60s early 70s. The balance spring was not jammed or gummed up, but has come adrift at one end. This might not cost too much after all.
Do you do paid work or just hobby on your own watches?
