Just made that very trip. Spent some time in Paris first, but then went to Venice, Florence, Amalfi, and flew out of Rome. Wanted to check out all the shops I could. Ultimately though, I didn't have any luck finding anything good and just decided to enjoy my time over there.
Keep in mind, every tourist over there wants to swing into these shops either to ask for pieces the shop doesn't have, or to try to show off a piece that they already own. The sales people have the same conversations every 15 minutes every day of their lives, and the majority of who they interact with doesn't buy anything. These are high tourist traffic cities and I didn't blame any of the shops for being a little cold. However, I will mention that the Panerai store next to the d'uomo in Florence, and the Rolex store just down from the Spanish Steps in Rome both had sales people that were friendly, loved to talk watches, weren't pretentious, and let you try on anything they had.
